Mango Salsa & Me

Love, love, love this fresh & festive salsa. This can be a topping for fresh fish, grilled chicken, saffron rice but, our favorite is scooping it up with a tortilla chip spoon!

The key? A ripe mango.

serves 4-6 people w/chips 

Mango Salsa ingredients:

  • 2 Ripe Mangos 
  • 4 Plum tomatoes
  • 1 (medium) red onion 
  • Bunch of cilantro 
  • Salt
  • Pepper
  • Lime

Peel the mangos, and slice (the slices should be roughly 1/4 inch thick) 

Core & remove the the insides of the tomatoes (how? slice the top off the tomato, slice the tomato in half and remove the inside). Once the shell of the tomato is left, chop into small bite size pieces. 

Slice the red onion in half, then chop. 

The mango and the tomato pieces should be the same size when you chop, as best as you can. The onion can be a little smaller than the mango and tomato pieces. 

Chop the cilantro into bite size pieces, roughly a 1/4 cup and add to the bowl. 

Squeeze one lime, salt & pepper to taste.
